Ah Huat Hokkien Prawn Mee Wins Me Over Completely

During my visit to the neighbourhood coffeeshop at Toa Payoh Lorong 6, I decided to give Ah Huat Hokkien Prawn Mee a try. I did not have very high expectations at first, but after my first mouthful, this humble plate of Hokkien Mee genuinely took me by surprise.

To be honest, I have never been a fan of Hokkien Mee made with yellow noodles and thin bee hoon, as I often find the texture of this combination less appealing. However, Ah Huat Hokkien Prawn Mee completely proved me wrong and changed my perception.

The noodles were beautifully coated with a flavourful prawn stock, giving every strand a rich savoury taste without being overly wet or soggy. The texture remained enjoyable with a slight bite, while the natural sweetness from the prawn-based broth came through wonderfully. The sotong (squid) and prawns were well-cooked, tender, and flavourful. They are thoughtful enough to serve the pork lard on the side, allowing those who enjoy it to mix it into the noodles, while others can simply leave it aside.

What impressed me most was how the dish achieved a perfect balance of flavours and texture. It was a comforting plate of Ah Huat Hokkien Prawn Mee that did not rely on excessive seasoning, allowing the freshness and richness of the prawn stock to shine through. After squeezing the lime and mixing the belacan chilli with the noodles, I immediately understood why it was such a good combination. The chilli brought a spicy kick and a subtle belacan fragrance that elevated the entire dish. It did not overpower the original taste of the noodles or the prawn broth. Instead, it added another layer of flavour and made every bite more enjoyable. The balance between the savoury noodles and the spicy belacan chilli was something I really appreciated.

Another thing I liked about Ah Huat Hokkien Prawn Mee was that the dish remained simple and focused on getting the basics right. There were no fancy ingredients or unnecessary additions. It was simply a well-cooked plate of Hokkien Mee with good stock, well-balanced moisture, and an excellent chilli pairing. Sometimes, the most satisfying local dishes are those that stay true to the traditional flavours we have grown up loving.

For $6, I felt that the portion was satisfying enough for a fulfilling meal. It is the kind of dish that I would happily return for whenever I am craving a comforting plate of Hokkien Prawn Mee.

Overall, my experience at Ah Huat Hokkien Prawn Mee was a very pleasant surprise. It may not be the most talked-about Hokkien Mee stall in Singapore, but it certainly impressed me with its well-balanced noodles and its unique belacan chilli that made a lasting impression.
