Coffee jelly is a chilled, wobbly dessert made with coffee that jiggles with every spoonful. It’s lightly sweet, slightly bitter, incredibly refreshing, and dangerously addictive. Popular across Japan, Taiwan, and many parts of Asia, this unique treat is the perfect mix of dessert and coffee in one delightful bite.

3 Ingredients to Make Coffee Jelly
I’ve used sheet gelatine for this recipe as it’s simple to work with. If you prefer, powdered gelatine works just as well too and it’s easier to find. Anyway, both help give the coffee jelly that soft, smooth, perfectly jiggly texture everyone loves.
Yes, instant coffee works perfectly here. It dissolves fully into the liquid. No grittiness. No mess. Just smooth, bold coffee flavour. Use your favourite brand. A stronger roast gives a more intense jelly. A milder one keeps it light and sweet.
Plain white sugar is all is really need, though raw sugar works beautifully too. It helps balance the natural bitterness of the coffee and gives the jelly a smoother, more enjoyable taste.

Three ingredients. That’s it. Let’s make it.
4 Easy Steps to Make Coffee Jelly
Step 1: Bloom the Gelatine
Soak gelatin in hot water. Let it sit for 5 minutes. It will swell and soften. This step helps the gelatine dissolve properly later.

Step 2: Heat Everything Together
Pour the bloomed gelatine into a small pot. Add the instant coffee and sugar. Add the rest of the water too. Turn the heat to low. Stir everything together slowly. Keep the heat gentle, no need for a hard boil.

Prefer the coffee jelly sweeter? Simply add a little more sugar. Love your coffee strong, bold, and slightly bitter? Just reduce the amount to suit your taste.

Step 3: Turn Off the Heat
Keep stirring until everything dissolves. No sugar at the bottom. No gelatine lumps. Once it’s smooth and clear, turn off the heat. Don’t let it boil too hard. Overheating can weaken the gelatine.

Step 4: Cool Down and Chill
Let the mixture cool to room temperature first. Then pour it into a container or dish. Put it in the fridge. Chill for at least 3 to 4 hours. Overnight is even better.
