Seeing a long queue at a stall way past lunchtime would make most people turn around and leave. But not if that stall is Chef Kang’s Noodle House. The moment I spotted it, I joined the line without questions asked. Because if you’ve heard even a little about this place, you already know it’s going to be worth the wait. Chef Kang’s Noodle House is in 2019 and 2025 MICHELIN Guide Singapore.

It’s mid-afternoon. Lunch is long over. But the queue at Chef Kang’s Noodle House isn’t budging. I look around and see people who have clearly made up their minds that they’re not leaving, and honestly, neither am I. There’s something about this queue that doesn’t feel like an inconvenience. It feels like a sign that I’m in the right place.

One thing that surprises me about Chef Kang’s Noodle House is how short the menu is. There are only three items. You can get noodles with char siew and wanton, noodles with shredded abalone, char siew and wanton, or just char siew on its own. That’s it.
Honestly, I respect it. When a place keeps it this simple, it usually means they’ve put everything into getting those few things absolutely right.
Chef Kang’s Noodle House-Hong Kong Style
I have ordered both Chef Kang’s noodles with char siew and wanton and noodles with shredded abalone, char siew and wanton. When my bowl finally arrives, the first thing I notice is the noodles. They’re Hong Kong style, the noodles are springy and smooth, with a satisfying bite to them. Every mouthful feels fresh and clean.

Here’s something I didn’t expect, the char siew is actually BBQ’d. That might sound like it should be the norm, but trust me, it isn’t. Most wanton mee stalls I’ve been to serve char siew that isn’t BBQ’d at all. But at Chef Kang’s, the char siew has that proper BBQ flavour which is slightly charred at the edges, smoky, with sweetness from the caramelisation.

I toss the noodles around in the sauce and take my first bite. The sauce is rich and savoury, and it coats every single strand perfectly. It’s not too salty, not too heavy. It’s just deeply flavourful in a way that keeps me going back for more. I finish every last bit without thinking twice.

The moment I look at my bowl properly, my eyes go straight to the shredded abalone sitting on top. There’s a generous amount of it, is way more than I expected in a bowl of wanton mee. It feels almost too good to be true.

But then I see the wanton.

I pick it up and I can’t believe the size of it. Gosh! This is honestly the biggest wanton I have ever had in a bowl of wanton mee. It’s plump, packed with filling, and the skin is thin and soft, and it breaks apart perfectly with every bite. I actually stop eating for a moment just to take it all in.

My Thoughts
I walked away from Chef Kang’s Noodle House very full and very happy. The queue, the springy noodles, the savoury sauce, the abalone, and that unbelievably generous wanton. Honestly, every minute spent queuing paid off the moment I took the first bite.
