Broth & Beyond Hot Pot Singapore Chijmes

I’ve had my fair share of hotpot meals, but this one at CHIJMES (Broth & Beyond) genuinely felt like a step up from the usual. What I liked most right from the start was the fact that everyone gets their own individual pot. No more arguing over spice levels or compromising on flavours—I could just pick exactly what I was in the mood for and enjoy it my way.

There’s quite a wide variety of broths to choose from, and when I visited, they were running a promotion where each broth was only $1. That definitely made the experience even better. It seems like they rotate different monthly deals, so I’d recommend checking their Broth & Beyond Instagram or Broth & Beyond Facebook before heading down.

The broths themselves are inspired by Yunnan cuisine, and I found them to be clean yet rich in flavour such as black truffle mushroom, coconut chicken, and slow-simmered herbal.

But honestly, the highlight for me was the Market Table. It’s not just your standard sauce station—it’s an entire spread with more than 50 items. I had a lot of fun exploring everything, from their special sauces to Yunnan-style appetizers and even the DIY dessert section where you can add your own toppings and customize your sweet treat just the way you like it.

For the sauces, I especially liked the pineapple chilli—it leans more sweet than spicy, which made it really easy to pair with almost everything.

One small bite that really stood out to me was the fried tofu (bean curd) — those little red and black cubes. They were perfectly crispy and savoury on the outside, while staying soft and light on the inside.

The dessert section was surprisingly memorable too. The panda marshmallow was probably the cutest thing on the table—chewy and fun to eat. And the cherry tomato tanghulu really surprised me. I’m not usually a big fan of tomatoes, but the thin sugar coating gave it a nice crunch and balanced out the flavour so well that I kept going back for more.

To end the meal, the staff served soft serve ice cream cones, and I liked that I could add my own toppings from the Market Table. It felt like a nice, customizable finish to the whole experience.

Overall, this place felt less like a typical hotpot meal and more like an experience. I’d definitely save this for a date night or a catch-up with friends—especially if you’re looking for something a little different from the usual hotpot spots.
